[Changnyeong County, Gyeongnam] Warm soups for the cold winter
Days are getting colder in Korea, so we believe now's the perfect time to introduce some hot, steamy soups that are bound to warm your empty stomachs. Today's destination is Changnyeong County.
<"Sugule" rice soup is hot, spicy, chewy and tasty, all at the same time.>
▶ "Sugule" rice soup
"Sugule" refers to tough beef directly under a cow's skin, and in Changnyeong, local restaurants use this chewy part of meat to cook soup with.
Sugule, bean sprouts, clotted blood, mushrooms, green onions and chili powder are all mixed together just for the soup, and people usually eat it off after dumping a bowl of rice in it.
<Changnyeong restaurants and food markets offer sugule rice soup year-round.>
If you're planning to visit Changnyeong and willing to try the dish, make sure to add Changnyeong Market on your itinerary, because the locale serves the best sugule rice soup, and is close from the Changnyeong bus terminal.
▶ "Songyibaeksuk," pine mushroom and chicken boiled in plain water
Mount Hwawang (756 meters) in Changnyeong has the best environmental conditions for mushrooms to grow, and such features are what paved the way for the southern county to develop many mushroom-inspired dishes.
<Songyibaeksuk is an alternative menu item for chicken-lovers who don't enjoy spicy food.>
Songyibaeksuk is a well-balanced combination of pine mushrooms, chicken, garlic and a bit of salt. Some restaurants in Changnyeong serve raw pine mushrooms as appetizers, too.
One peculiar aspect you'll find at eateries serving songyibaeksuk is that the cost of the dish is usually excluded from the menu, because the supply of pine mushrooms widely varies. Make sure to ask about charges before placing your order.
