[Gimhae, Gyeongnam] In Gimhae, it all comes down to sea eels and pork
Not only does Gimhae features chief relics of the Gaya confederacy (42-562), but also whips up some of the best sea eel and pork-inspired dishes. Today, we will introduce two menu items that travelers find themselves instantly falling in love with.
<In Gimhae, sea eels are cooked spicy and tender.>

▶ Sea eels
In Gimhae, restaurants specializing in sea eels date back to the early 1990's. Since then, Gimhae has built a reputation for serving the country's best sea eels. The most popular restaurants are clustered near Gimhae Bridge, in a place called the Bulam Sea Eel Town.
One prime reason why sea eels taste best in Gimhae is that the sauce added on top fits well with the fish. Red pepper paste, soy sauce, garlic and ginger are all mixed together, and offered to those who enjoy spicy twists to their food.

Sea eels improve one's skin, detoxification functions and blood vessels. The seafood is also effective for preventing adult diseases and winter colds.
<"Dwitgogi," or "back meat," tastes best with slightly-grilled kimchi.>
▶ Dwitgogi
Pork belly, also known as "samgyeopsal," is generally the most popular part of pork among Koreans. But in Gimhae, dwitgogi, which usually refers to the head or bottom of a pig, is considered the tastiest parts.
Restaurants in Gimhae usually serve those parts with pork neck and pork cheeks, and all together, they're grilled with fast speed. Make sure to slightly grill gimchi on the side as well, because the seasoned vegetable adds texture to the pork bites.

Dwitgogi-specialized restaurants are lined in Naeoe-dong, and servings cost as little as around 3,000 to 4,000 won per person.
