Foodies! "JINJU NAENGMYEON" is Here~!


Naengmyeon( Cold noodles in chilled broth) is probably the most eaten food 
during summers for most Koreans. 
In the summers lots of foodies in Korea love to hunt for 
special naengmyeon restaurant that has taste and tradition.  

To those who do not know about this fantastic dish,
Naengmyeon is a noodle made with buckwheat and starch that is served in a chilled beef broth with pickled radish, sliced Korean pear and a hard‐boiled egg. 
It is often seasoned with vinegar and mustard.

Naengmyeon varies from regions.
Among others, Pyeongyang, Hamheung and Jinju regions
are most famous for their naengmyeon.
Today, we are going to introduce Jinju naengmyeon.




Jinju naengmyeon's distinction from other region is that it uses seafood broth instead of the usual beef broth. 
The ingredients of the seafood broth uses anchovy, dried mussels, octopus, dried pollack, manila clam, and shiitake mushrooms.
Also the toppings are different from other regions, as it uses slices of cabbage Kimchi and pan cooked egg smothered beef~





The side dishes are various types of Kim-chi 

There are big sized steamed dumpling and fried dumplings as a side menu. 




Naengmyeon is served in a large stainless-steel bowl to 
keep the broth maintain its cold temperature.
 The two main varieties of naengmyeon are
 mul naengmyeon (물 냉면) and bibim naengmyeon (비빔 냉면). 
Bibim naengmyeon is served with a spicy dressing made primarily from gochujang (red chili paste) and eaten all mixed.

The toppings are generous and add beautiful color to the dish~
